Turkey noodle Soup with Cheesy corn bread
You need:
Left-over turkey – bones and meat, 1 box of Mac and cheese noodles only, (save flavor packet for cornbread ) 1 can corn, box corn muffin mix, 3 slices cheese, 3 onions, 3 carrots, 1 stick margarine
For Soup:
Remove and shred all meat from the turkey – save to a plate for later
Place all turkey bones and skin in a large pot along with 2 onions cut in half, and 2 carrots chunked. Cover with 1 gallon of water and bring to a boil. Then lower to a simmer and let simmer for slightly covered for 1 hour.
Strain all solids and return broth to the same pot.
In a separate skillet sauté 1 diced onion, and 1 diced carrot in 1/3 stick margarine until soft. Then add to broth and bring to a boil. When it boils add 1 box of Mac and cheese noodles (save the cheese packet for cornbread). Boil for 10 minutes.
Reduce to simmer and add ½ can corn and all reserved turkey meat. Simmer until all is hot. Taste and add salt and pepper as needed. Serve with cornbread.

Corn Bread with cheese and corn – NO EGGS
You need:
½ c Milk, 2 slices cheese, 1 box cornbread mix, 1 box mac and cheese.
Grease an 8 ½ x 8 ½ square pan with margarine to cover the bottom and sides. Preheat oven to 400’
In a bowl mix together:
Corn meal mix
½ can corn (add the other half to soup)
2 slices cheese – diced small
Mac and cheese packet (save noodles for soup)
Then add enough milk to make the batter thick – Approx. ½ cup of milk should be needed. The batter should be thick but easily spread into the baking pan.
Bake at 400’ for 25 minutes (5 minutes longer than what the box says to make sure cheese melts into bread.) The result will be moist in the middle but will be fully baked.
Serve with soup.

Chicken and Rice soup
You need: 1 cup of cooked rice, 1 packet of chicken soup mix, 4 cups of water.
Prepare chicken soup mix as directed, add rice, and serve.

Turkey Tacos
You need: 2 cups shredded left-over turkey
One onion – diced
Packet taco seasoning
½ cup water
Tortillas for serving
Sauté diced onion in 2 tbsps. oil until translucent
Add a packet of Taco seasoning and stir to combine then add shredded turkey and water and cook to heat through.
Serve on tortillas warmed in the oven
